Easiet Meal for Company---

With left over turkey or chicken-

1 box or home made stuffing-
1 stick butter
chicken or turkey meat shredded 
1 can home made or store bought creme of celery and mushroom- I also love to use cream of asparagus
May make 2 days in advance and left in fridge- reheats beautifully

take your butter and melt in pan large enough for entire box of stuffing -either herb or cornbread
mix in with stuffing
It will be dry

layer a bit of stuffing into bottom of pan
top with half of meat
put a layer of stuffing on top
pour a diluted can of soup with broth left over or just water same amount as can soup
pour that over meat
your next layer of stuffing
over that the rest of meat
cover that with your next soup mixture
the stuffing you have left over-will not be much sprinkle on top
bake at 350 for about 25 minutes
MAKES A HUGE 12 INCH casserole rectangle or you can use the aluminum toss away pan for easy take to a group meal-leave the casserole empty pan and you have nothing to carry back-get lost-or wash ease or concern over getting it back-





Healthier Jello treats-


instead of using water especially in the late fall or during cold and flu season USE YOUR ELDERBERRY SYRUP OR TONIC. Its great if you add fruit or some veggies. When using box jello and your favorite flavor- only use a 1.5 cup of elderberry if it calls for 2 or 3. My favorite is fruit cocktail.

how to make your own bisquick and recipes



for one cup portion-
1 cup flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1 tablespoon Crisco

Mix dry ingredients together, then using a pastry knife cut the Crisco into the mix. Makes 1 cup Bisquick equivalent


9 cups flour
1 1/2 cups non-fat dry milk
1/2 cup granulated sugar
3 tsp. baking powder
1 tsp. baking soda
3 tsp. salt
2 1/4 cups vegetable shortening (Crisco)
Mix this biscuit mix up in advance and keep in an airtight container on the pantry shelf. No need to refrigerate.
Use in any recipe that calls for store-bought biscuit mix.

Keeps for up to 3 months.

Preparation:
It's important that the ingredients be very well mixed.
In a very large bowl, stir together all ingredients except Crisco until very well combined.

Cut in the Crisco using a pastry blender or two knives until mixture resembles coarse crumbs. Store in airtight container. If a leaner mixture is desired, or you prefer to add some butter when making the biscuits up, the shortening may be reduced by 1 to 3 tablespoons.

Cooks Tip: Leave a 1 cup plastic measure in the container for easy measuring.

Biscuits:
2 1/4 cups biscuit mix
2/3 cup milk
Preheat oven to 450°F.
Combine ingredients and mix for 30 seconds or just until mixture comes together. Turn out onto a lightly floured board; knead 10 times and cut into rounds using a floured biscuit cutter. Arrange biscuits on a lightly greased or parchment-lined baking sheet and bake for about 7-10 minutes or until lightly golden brown (depends upon size of biscuits).

Pancakes:
2 cups biscuit mix
2 eggs
1 cup milk or buttermilk
1/2 tsp. vanilla
Combine ingredients mixing together with a fork or whisk. Pour a small circle of batter onto a hot griddle or skillet brushed with butter or oil; flip pancakes when tiny bubbles begin to form around edges and bake second side until cooked through. Serve with melted butter and syrup.
Yield: 10-15 pancakes (depends upon size).

Waffles:
2 cups biscuit mix
1 1/4 cups milk or buttermilk
1 tsp. vanilla
1 egg, lightly beaten
1/4 cup melted butter
Preheat waffle maker according to manufacturer's instructions; spray waffle maker with non-stick spray before heating.
Combine all ingredients, mixing well. Pour onto hot waffle maker and close cover (fill only the center - the mixture will expand). Bake until mixture stops steaming or until desired doneness. Remove from waffle maker and serve with melted butter, syrup or jam, or sprinkle with cinnamon sugar.

Note: If batter is too thin, add another tbsp. biscuit mix; if batter is too thick, add another tbsp. milk or water.

Negative People

This is something to think about when negative people are doing their
best to rain on your parade. Remember this story the next time someone
who knows nothing, and cares less, tries to make your life miserable.

A woman was at her hairdresser's getting her hair styled for a trip to
Rome with her husband She mentioned the trip to the hairdresser, who
responded:
' Rome ? Why would anyone want to go there? It's crowded and
dirty. You're crazy to go to Rome . So, how are you getting
there?'
'We're taking Continental,' was the reply. 'We got a great rate!'

'Continental?' exclaimed the hairdresser. 'That's a terrible airline.
Their planes are old, their flight attendants are ugly, and they're
always late. So, where are you staying in Rome ?'
'We'll be at this exclusive little place on Rome 's Tiber River called
Teste.'

'Don't go any further. I know that place. Everybody thinks its gonna be
something special and exclusive, but it's really a dump, the worst hotel
in the city! The rooms are small, the service is surly, and
they're overpriced.. So, whatcha' doing when you get there?'

'We're going to go to the Vatican and we hope to see the Pope.'
'Oh, that's rich,' laughed the hairdresser. 'You and a million other
people trying to see him. He'll look the size of an ant.
Boy, good luck on this lousy trip of yours. You're going to need it.'

A month later, the woman came in for a hair appointment. The
hairdresser asked her about her trip to Rome .

'It was wonderful,' she exclaimed. 'Not only were we on time in one of
Continental's brand new planes, but it was overbooked, and they bumped
us up to first class. The food and wine were wonderful, and I had a
handsome 28-yr-old steward who waited on me hand and foot.

The hotel was great! They'd just finished a $5 million remodeling job,
and it's a jewel, the finest hotel in the city They were overbooked,
too, so they apologized and gave us the owner's suite at no extra
charge!'
'Well,' muttered the hairdresser, 'that's all well and good, but I bet
you didn't get to see the Pope.'

'Actually, we were quite lucky. As we toured the Vatican, a Swiss
Guard tapped me on the shoulder, and explained that the Pope likes to
meet some of the visitors, and if we'd be so kind as to step into his
private room and wait, the Pope would personally greet us.
Sure enough, five minutes later, the Pope walked through the door and
shook my hand! I knelt down and he spoke a few words to me.'

'Oh, really! What'd he say ?'

He said: 'Where did you get that horrendous hairdo?'
