Our Favorite Breakfast Recipe for Holidays

Sausage Casserole

10 eggs
1 cup rich milk such as carnation evaporated milk or whipping cream milk.
1 pkg sausage- they type you can crumble that comes in a block
1 pk sharp cheddar cheese crumbles or shredded
7 slices of bread (thick slices may work better)

First start sausage cooking in frying pan. Let cook until well done and crumbly.
YOu will need to use a spatula and break apart and make into little pieces. While that is cooking-
In a long casserole layer with bread-side by side- you may need to pull apart to fill in spaces with extra bread.
When sausage is well done top the bread.
Layer the cheddar across the sausage
In another cool bowl scramble 10 eggs and add milk and scramble a little more.
Pour over the casserole.

I add either some Texas pete for a little extra flavor or some hot sauce and sprinkle with pepper and a tad salt for extra flavor. Put in fridge to settle over night. Before you put in oven let sit for aprox a hour. YOu dont have to do this but it is good. Bake on 350 covered for aprox 35 minutes then uncover to let the edges brown a little. Cut into squares and you can have for company or save for breakfast all week long. Keep in the fridge in squares or freeze.

fresh fruit salad- add yougurt and poppy seeds
Blueberry muffins
juice and coffee
GRITS-
fried potatoes
